 How to make Ghanaian gari foto

This is served for breakfast or lunch, accompanied by shitor din (chili sauce). Gari is cassava paste.


2 cups gari  (substitute instant mashed potato powder) 1 ⁄2 cup warm water 1 ⁄2 cup cooking oil (preferably palm oil or peanut oil)

1 onion, finely chopped 1 ⁄2 cup fresh or canned chopped tomatoes 1 clove garlic, minced 6 eggs, beaten salt and black pepper to taste


Prepare gari. Place it in a bowl. Sprinkle with water to evenly moisten it (it may not be necessary to use all the water), while stirring with a fork.

 Cover with a clean cloth and set aside. Heat oil in a pan. Fry onion until soft.

 Add tomatoes and cook for a few more minutes until well blended.

 Stir in the eggs, and cook until done but still moist.

 Fold in prepared gari. Remove from heat. Season to taste. Serve immediately with shitor din or tomato ketchup with a few drops of chili sauce (if desired).
